“WILD & BERRY” HERB MENU — REVIEW
Last Friday, November 22, 2024, it was that time again: Our inn invited visitors to a special culinary experience. Together with Maria Bachmann, we embarked on a culinary journey through woods and meadows — in the form of a sophisticated 6-course menu. Such evenings always give us great pleasure, as we benefit from Maria's knowledge and can develop exciting & creative dishes together again.
Each course was, of course, accompanied by Maria, who shared her extensive knowledge with our guests.
THE MENU:
- Pumpkin seed pesto bread & farmer's bread I olive oil I nasturtium spread
- radicchio with autumn fruits I pumpkin chutney I sheep cheese I walnuts I sloe balsamic vinegar
- Chestnut and celery soup I potato leaf I quendel
- Smoked duck breast I leek and porcini quiche I can
- venison with pine spice I lingonberry rosehip jelly I carrot ginger puree I Brussels sprouts
- Rowanberry boskoopkrapferl I holler roaster I almond ice cream
